It is summer! No, really – it’s official. Classes ended last week for me and I finished grading exams over the weekend! Summer is here! If you aren’t there quite yet, you soon will be! Naturally, I wanted to post something to kick off summer with a bang and after a little thought, I realized the perfect thing! Salad dressing!
When you live down south, one of the most important lessons you can learn is how to prepare cold food. It has been unseasonably cool these past couple of days…and by that, I mean in the 80s. Now just try to imagine what July and August are like! Call me crazy, but eating hot food in the summer just isn’t always that appetizing when its 100ºF outside. This said, salad is one of my best friends in the summer, especially when it is wearing this dressing! (Get it? That’s a “dress” joke! Hehe…)
The best part about this salad dressing is that it is light and fresh and makes your insides feel clean! I’m all about food that leaves me feeling so fresh and so clean, clean! Really, though…it only has 2 teaspoons of olive oil, so it doesn’t give you the greasy texture that you get in some store-bought dressings. It also has no preservatives…another difference from its store-bought brother-from-another-mother. Lastly, and possibly most importantly, it comes together in less than 5 minutes! We’re talking 2-3 minutes, tops. Try it and you’ll see…it’ll be your new best friend!
- Juice of 1 large lemon
- 1 tbsp dijon mustard
- 2 tsp olive oil
- 1 tbsp water
- 1 tbsp chives, finely chopped
- Combine ingredients in a small bowl with a small wire whisk and voila! (I like to use a small jar instead of a bowl so I can give it a quick shake and it's ready. Also, when it is in a jar, it is storage friendly in case of left-overs!)
- Whether you use a bowl or a jar, savor that summer salad!
