If you’re in the mood for a little summer pasta, consider this white bean pasta! It has all of the deliciousness of a classic pasta dish (tomatoes, garlic, olive oil!), classic Italian seasoning, and the healthy benefits of the white beans and spinach! We love to make a big batch of this and have lunch on hand all week. Continue Reading

Last week we discussed adding variation to your menus. One of the ways I mentioned is through seasonal eating. This is really the best way to add variation because by eating fresh, local produce you get more nutrients from your food (as they were harvested more recently) and you don’t get sick of any one thing because they phase in and out of season throughout the year. The one pitfall to committing 100% to seasonal eating is that if you have a craving for something out of season, you may have to wait a long time to have it. I’m a big believer of all things in moderation, though, so you could just have that one thing and then go back to eating seasonally – no harm, no foul!
Family reunion time!!! Actually, it’s more than that…it’s ITALIAN family reunion time! Italian family reunions are really quite similar to many family reunions…plus animated hand gestures in every conversation and a ton of extra emotions! 😉 We try to all get together every other year to spend time with Grandma and Grandpa and have some fun with each other. The family is very spread out, so it has been a lot of fun to still know my cousins despite how far apart we are during most of the year. In honor of this week, I decided to post a few of my favorite Italian dishes throughout the week.Continue Reading
Earlier this month, when I posted Menu Plan Monday #3, I told you to keep a look out for this recipe, and here it is! This is fantastic! It’s low-carb, high-protein, low-sodium, sugar-conscious, dairy-free, gluten-free…the list could go on! Basically, it’s amazing. On top of being that healthy, it’s extremely quick and easy – it’s ready to eat, start to finish, in 15 minutes! I made this several times while we were in Boston, sometimes for dinner, sometimes for lunch. When a recipe is this quick and easy, you can eat it whenever you want!Continue Reading
Welcome back to week 5 of Menu Plan Monday! So far we’ve covered:
The next step is building variation into your weekly menu so you don’t eat the same foods over and over again. Life is so much happier when you really enjoy what you’re eating, and as they say, “absence makes the heart grow fonder.” Build variation into your weekly menus so you’ll enjoy each meal more!Continue Reading
