We’re in the home stretch for the Fourth of July – it’s only a couple days away! I’ve shared a recipe for Baked Sweet Potato Fries and another for Southwestern Black Bean & Corn Salad, but what are you planning for your main dish? Often the answer is burgers, hotdogs, BBQ, etc. Why not try something a little different this Fourth, but just as classically American – Bacon, Lettuce, Tomato, & Avocado Sandwiches!
These sandwiches are amazing…and it’s all thanks to my secret ingredient. You think the ingredient has something to do with vine ripe tomatoes, don’t you? Well, those are beautiful, but nope! So what is this secret? Two words – lime juice!
It may sound a little odd, but the lime is perfect when squeezed right over the top of the avocado. It can then drip down into the sandwich, but you don’t add enough to make anything soggy. My husband was actually skeptical when he saw me reaching for the lime (he’s not skeptical of me often…especially when I’m cooking…so I was comically surprised!), but as soon as he bit into his sandwich he realized his mistake!

Strangely, my food always seems to disappear before I can even think to get out my camera! 😉 And don’t forget to pause for a moment to truly appreciate what it means to live in a country that values individual freedom so greatly!
