Hopefully you all had a great Fourth of July yesterday! If you made the BLTAs I posted earlier this week, you might find yourself with a little extra tomato and extra baby lettuce. If that is the case, then you’re in luck – these Tomato Salad Pita Pockets are perfect for a light summer lunch or dinner (something I definitely need after yesterday, haha!) and they will help you use up some of your leftover tomato and lettuce. Not to mention, there are only 6 ingredients in the entire sandwich, so you probably have most of these things already on hand!
