Here’s a breakfast for those of you out there that either don’t process sugar so well in the morning time, love low carb meals, like to start your day off with protein and healthy fats to keep you going until lunch, or are just plain looking for something different! Honestly, that probably covers about all of us! If your kids are willing to eat avocado and eggs, this would also be something to have them try – anything to get some protein in those little bellies before whatever big things they have planned that day!
This has a very creamy texture and goes very well with the tomatoes – without the tomatoes it gets a little too uniform in consistency for my tastes, but that could just be me. I also like the play of the sweet tomatoes on the saltier avocado and eggs. What can I say, I’m a lover of variation! On top of being sugar-conscious, low-carb, and full of protein and healthy fats, this meal is low-sodium, high-fiber, and paleo friendly! But be warned: a serving is just half of an avocado and it is FILLING!
