I love summer! There are so many reasons it is fabulous – the warmth, a break from the stress of the school year, the sunshine, the outdoor activities, picnics, and…of course…the availability of so many local fruits and veggies! I love food, so the fact that I can walk out to the garden or take a quick trip to the local farmer’s market and have fresh produce in my hands that was on the plant that morning makes me about as happy as can be! This recipe is for those of you who enjoy the summer for all of it’s deliciousness, too! And if you planted zucchini or squash in your garden, you’re probably wondering how you’re going to eat it all – this recipe is how!
Summer squash, zucchini, and tomatoes – a delicious combination, especially when it is seasoned to perfection! This is the perfect side to pair with pretty much any grilled meat. On the other hand, toss it will some beans and just scarf it down on its own for dinner if you’re craving a vegetarian/vegan option! Either way, I love it and think you probably will, too! If you have leftovers, keep them! They can be turned into a delicious lunch the following day!
