Earlier this month, when I posted Menu Plan Monday #3, I told you to keep a look out for this recipe, and here it is! This is fantastic! It’s low-carb, high-protein, low-sodium, sugar-conscious, dairy-free, gluten-free…the list could go on! Basically, it’s amazing. On top of being that healthy, it’s extremely quick and easy – it’s ready to eat, start to finish, in 15 minutes! I made this several times while we were in Boston, sometimes for dinner, sometimes for lunch. When a recipe is this quick and easy, you can eat it whenever you want!
Another great part to this recipe is how few kitchen tools you need. If you have a cookie sheet, a knife, and a bowl in your kitchen, then you can make this recipe. We rented our apartment in Boston furnished and suffice it to say, the kitchen was lacking in supplies! There was only 1 sharp knife in the whole place and we went out and bought a cookie sheet! I am happy to be home where I have my normal kitchen tools, but I have a new found appreciation for recipes that use very few (and very normal) kitchen supplies! This is definitely one of those recipes – enjoy it for all of its simplicity, ease, health, and…of course…tastiness!
