I love summer! There are so many reasons it is fabulous – the warmth, a break from the stress of the school year, the sunshine, the outdoor activities, picnics, and…of course…the availability of so many local fruits and veggies! I love food, so the fact that I can walk out to the garden or take a quick trip to the local farmer’s market and have fresh produce in my hands that was on the plant that morning makes me about as happy as can be! This recipe is for those of you who enjoy the summer for all of it’s deliciousness, too! And if you planted zucchini or squash in your garden, you’re probably wondering how you’re going to eat it all – this recipe is how!Continue Reading

Here’s a breakfast for those of you out there that either don’t process sugar so well in the morning time, love low carb meals, like to start your day off with protein and healthy fats to keep you going until lunch, or are just plain looking for something different! The next morning we hopped in our rental car and headed straight to York, Maine.Continue Reading
There’s nothing like an easy, nutritious breakfast! You’ve probably heard that breakfast is the most important meal of the day. It jump starts your metabolism and gives your brain energy to process whatever you throw at it until lunch time. This meal is particularly important for kids, as studies have found that breakfast increases a child’s ability to focus throughout the morning. If they can focus better, they can learn better, and learning is what being a kid is all about — whether that be learning in school or learning a fun new skill like riding a bike. These mini frittate (Italian plural of frittata) are perfect for your family because they are packed with protein and veggies, but are so easy for you to pop out of the fridge, into the microwave, and then onto a plate in the morning! If your kids hate mushrooms, try my Breakfast Burrito Muffins, which are exactly what they sound like – a breakfast burrito in muffin shape!Continue Reading
