Lemon Biscotti. Nothing is quite as refreshing as a cup of tea (or coffee!) and fresh lemon biscotti. The tea could be cold or hot and it would make no difference. These biscotti are crisp, light, and refreshing! They’re sweet, but have a tart little lemon kick! I’ve eaten these for breakfast, a snack, and as dessert. The lemony icing drizzle just tops the biscotti off with a little more tart. I enjoyed these with or without the icing, so take your pick…or have them both ways, since the icing is SO easy to make!
Biscotti are interesting cookies that get their crunchy texture from being twice-baked. These specific biscotti are low fat and fewer than 100 calories per serving! The white chocolate acts a deliciously creamy sweetener, white the lemon counters with its summery tartness. While there is a little kneading involved, it is super easy. The recipe takes a little over an hour start to finish, but 50 minutes of that is bake time, so it doesn’t feel like much work at all! In fact, I may make another batch of these tomorrow – these are John’s favorite summer cookie right now…and mine, too!
