You know those mornings when you wake up and want dessert for breakfast? Like Mondays…or the first day of school. Anything to make that day start on the right foot. Well, this is one of those unique recipes where you actually could eat dessert for breakfast – it’d even be good for you! These Caribbean Popsicles are nice and light, so if you are going to eat them for breakfast, I’d recommend to partner them up with something else (perhaps with some protein?). You could eat these as the dessert to your breakfast…an unheard of event! That would definitely start a tough day off on a happy note!
The best part about these popsicles is a tie between how good they are for you, how amazing they taste, and how EASY they are to make! You can even put the popsicle sticks in them right after blending the ingredients together since it will be partially frozen already thanks to the frozen strawberries. I’m all for popsicles where I don’t have to go back and remember to put the sticks in – it’s just my style to forget to put the sticks in and end up with a popsicle you have to eat with a fork! (They do make popsicle molds to get around this, but I was working with an old-school mold on this recipe.)
Now here’s the list of awesome nutritional facts these popsicles have that not all popsicles qualify for: vegan, vegetarian, low-fat, low-sodium, kidney-friendly, paleo, and gluten-free! Also, there is no sugar added (make sure your juice is 100% juice, no sugar added). To top it all off, 1 of these popsicles is only 47 calories and 1 weight watcher point plus. John’s not even a huge popsicle eater, but he loved these! Happy summer…now go relax pool-side with a popsicle.
