A few weeks ago I posted Roasted Summer Squash, Zucchini, & Tomatoes. In that post, I mentioned making sure to save your leftovers to create a delicious lunch the next day. I now give you…a delicious lunch for the next day! The nice part about these veggies is that they can be used in a variety of ways and turning the leftovers into something different is generally easy and quick. This particular lunch is just a simple, vegetarian pita, but will rock your world with its ooey-gooey-cheesiness!
Another nice aspect to this sandwich is that you don’t have to have the leftovers to make the pita melt. It can be made in only about 5 minutes longer using fresh ingredients if you’ve got a craving for a veggie pita melt, but didn’t pre-make the roasted veggies. I’m all for lunches with options, so this sandwich works well for me. No matter what, though, it’s quick, it’s easy, and it’s down right yummy.
