What. A. Week. Ok, yes, I’ve been a little absent from the blog, but since I last wrote, we found a new place to live and packed the entire South Carolina house! I am so excited to get into the new house and get things settled…and the finish line is in sight! My new kitchen is going to be fantastic, so as soon as I can unpack, I should be back to posting my regular three posts per week. Can you tell that I’m a little eager to be settled into the new place?
Just to think that it was less than three weeks ago that John received the job offer! These last couple of weeks have been a whirl wind of stress, excitement, and cardboard. (No, really. I feel like I’m living in a child’s dream fort!) Thank goodness that Lowe’s sells cardboard boxes for a steal! We could have picked up used boxes from places like Walmart and the grocery, but my sense of smell is too strong for that. (I once smelled one of my friends in college when she was walking a football field’s distance behind me. True story. Did I mention I’m a bit odd?)
In any case…new boxes only smell like cardboard, so that is what we got! I saved a bunch of boxes from our last move, though, so I haven’t had to buy too many new ones.
Pretty much the only things left to pack are the pantry, fridge, and those last couple of boxes of random stuff. You know, all of the small things you discover as you empty every drawer in the house? Yea, it’s crazy.
Speaking of crazy – this oatmeal is crazy good. I will be eating it for breakfast at least once a week this fall, if not more. It’s tasty, filling, and has lots of fun textures thanks to the pepitas and pecans. It is also another great example of how to use your pumpkin butter! Try it on a cool, fall morning – it’ll put you in a festive fall mood!
