It’s Thanksgiving time! I love this holiday so much. Getting together with family and friends to celebrate what we are thankful for is so much fun. In my family, it is a tradition to go around the table to say what we are most thankful for from the last year. Generally, that causes a lot of reminiscing and reflecting, which leads to a lot of fun stories!
There aren’t any strict vegetarians in my family, but there are some in John’s. With that in mind, this is a little recipe that is a crowd pleaser as a side, but is also perfect for Thanksgiving tables where you have vegetarian eaters. Also, this is super easy to make gluten-free. It’s simple and can be prepared a day or two in advance, then popped in the oven about 30 minutes before you’re ready to eat! If you’re making a dish at home to take to another house on Thanksgiving, this is a great option because it is dry enough that it won’t slosh around in the car and you can just cover the dish with foil and pop it in the oven when you arrive to your destination!
