Happy day after Thanksgiving! I hope you all had a fabulous day yesterday – I certainly did! Generally, the day after Thanksgiving is a “fend for yourself” day in my family. We don’t have any planned meals, but you’re welcome to anything in the fridge or pantry. Leftovers, of course, are fair game. I’m a big fan of eating my leftovers just as another Thanksgiving meal, but I also enjoy mixing and matching leftovers with other ingredients we keep on hand.
One of the easiest mix and match meals you can make with leftovers is a leftover veggie scramble. All you need are eggs, leftover vegetables from the previous day (I like to use green veggies like green beans, brussels sprouts, etc.), and cheese. Well, really the cheese is optional, but I love cheese in my eggs! If you don’t, just skip it! So, if you’re looking for something to do with your leftovers that is so quick and easy that it barely counts as cooking, I highly recommend some veggie scrambled eggs!
