Do you guys ever feel like dinner has gotten boring? Like you’ve been eating the same kind of stuff over and over again….like you’re stuck in a rut. I mean, the dishes are different, and they’re all delicious, but after the umpteenth time you’ve had chili, you’re ready for a change! Well, sometimes I start to feel that way in the winter. I know, I know, winter doesn’t officially start until Sunday. Well, I’m jumping the gun, then! I suppose it all started with the farmer’s market last weekend…
On Saturday mornings, I’m a big fan of waking up and heading to the farmers’ market when it opens. See, John and I like to eat locally…and organically, if we can swing it. We head over to a growers only market to get produce for the week. Sometimes there are things we need that we can’t get at the market. In those cases, we also visit Trader Joe’s. I’m a big fan of Trader Joe’s because I can buy organic ingredients without paying organic prices. Win-win! This past weekend, we headed over to the farmers’ market and I was just so struck by how little there was in season! I mean, there is plenty of great produce in season, but when I compare it to how the market looks in May, then it’s practically barren!
Naturally, I bought what I could – namely some organic bok choy, carrots, lettuces, mustard greens, sun-chokes. (Can you tell that I ate some pretty rad salads this week?! Oh yea!) Salads, however, are to easy to think of when you see all of those greens. I wanted to make something special, something that screamed, “I was made with ingredients from a farmers’ market full of plentiful produce!” And you know what? That’s exactly what this stir-fry says!
In no way do you think, “Same-old, same-old,” when you’re eating this. More like, “Woah! This is the perfect combination of sweet, spicy, sour, and salty – it’s maddening!” This is not a re-run of last night’s dinner. It is an all-encompassing party in your mouth! What’s the point? When dinner’s got you down because it’s getting a little clone-like, a.k.a. boring, make this stir-fry!
