I love sweet potatoes. They’re great in all kinds of dishes and at all sorts of meals. I’ve even eaten them at breakfast (in South Korea) and they were great! One of my friends used to tease me all the time about my “obsession” with sweet potatoes – she’d seen me eat them in sushi, chili, soup, Mexican, and so many other dishes.
They really are quite delicious and add a great sweet flavor to your cooking without any extra sweetener. They are also so versatile, going well in sweet dishes, spicy dishes, savory dishes. I really enjoy cooking with them.
This is a great side dish for any meal. The rosemary, salt, pepper, and oil ground the sweet potatoes and create a fantastic savory-sweet side to accompany meat, poultry, fish, or to combine with other vegetarian dishes for a complete meal. The best part about this amazing dish, though, is that it comes together in less than 20 minutes! Nothing beats easy, quick, and delicious!
