One of my dearest loves in life is garlic. As far as I’m concerned, there are two types of people in this world: garlic lovers and garlic haters. I belong in the former, as does any chef, cook, or self-respecting foodie that I’d ever trust to make me dinner! It is a miraculous ingredient that deserves our attention and can be used subtly or can go all out!
One fantastic and versatile way to prepare garlic is to roast whole heads of it in the oven with a little olive oil. You end up with deliciously soft cloves of garlic that you can squeeze right out of its peel and onto bread as a spread, into a dip, or into whatever recipe you’d like! The flavor of the garlic, as well as the smell, become milder through the roasting process. If you’re looking for new ways to work with garlic, or you’re just starting to experiment with it, you should certainly give roasted garlic a go!
