Today’s high is in the twenties. I’d say that’s definitely soup weather. We had one good week where the highs were all in the upper fifties, but now the cold has really set in. I’m hoping warmer weather is on its way, but until then, I’m going to eat soup and try to stay warm!
This gingered carrot soup is full of flavor, with just the right amount of sweet and spicy from the ginger! If you’re looking for a delicious way to get some more veggies into your diet, this is a great option! Each LARGE bowl of soup is only 160 calories, making it perfect to partner with something else.
I recommend pairing it with an asian-inspired protein like seared tuna, sashimi, sushi, or, if you’re vegetarian, you could try my Super Powered Green Protein Stir Fry. That said, I think there are plenty of other options that would also pair well with this. I’m thinking about trying it with some teriyaki baked chicken next time!
Soup at dinner is amazing, but you could easily pack it up to take it to work to have at lunch. While being low in calories, it works wonders to fill you up, but don’t forget to add some protein in there! This soup served with a little salty, steamed edamame on the side would be an excellent for lunch.
Whatever you pair this with, it’s sure to add some much needed warmth to your life and spice up the drudgery that winter has become. Spring – when will you be here?!
