Focusing on low-fat eating, I still try to prepare food for all kinds: gluten-free, dairy-free, protein-rich, vegetarian, vegan, etc. I love quick meals and meals that can be frozen for later, because after a day of middle school excitement — believe it or not — I don’t always want to cook, but I do still want what I know is healthy!
Though named Scrumptiously Skinny, this is a reference to the ingredients I work with, not the clientele I aim to serve. Weight is just a number, but health is a life-style. I hope to inspire my readers (and possible future children) into being as healthy as they can be, which sometimes means eating a cookie because emotional health can be just as important as the physical! Though we all want to look and feel our best, in my opinion, model-skinny is not this look. Everyone is different and we must always keep this in mind when setting our health goals!
