Happy November! (And Happy Halloween yesterday!)
In honor of all the kids who trick-or-treated last night, and even the dedicated parents I saw who dressed up, too, I decided to post a treat – Maple Pecan Pumpkin Biscotti, aka autumn sweetness in your mouth! These are perfect for dessert with ice cream, are excellent at breakfast with coffee, and would do really well at tea time, too!
If only we all had tea time, still. I mean, doesn’t work need to end a little earlier so everyone can have some tea? Or perhaps all offices could just be equipped with a tea room for people to go for an hour every afternoon to sip tea, eat these biscotti, and de-stress. That would be awesome. You know those mornings when you wake up and want dessert for breakfast? Like Mondays…or the first day of school. Anything to make that day start on the right foot. Well, this is one of those unique recipes where you actually could eat dessert for breakfast – it’d even be good for you! These Caribbean Popsicles are nice and light, so if you are going to eat them for breakfast, I’d recommend to partner them up with something else (perhaps with some protein?). Lemon Biscotti. Nothing is quite as refreshing as a cup of tea (or coffee!) and fresh lemon biscotti. The tea could be cold or hot and it would make no difference. These biscotti are crisp, light, and refreshing! They’re sweet, but have a tart little lemon kick! I’ve eaten these for breakfast, a snack, and as dessert. The lemony icing drizzle just tops the biscotti off with a little more tart. I enjoyed these with or without the icing, so take your pick…or have them both ways, since the icing is SO easy to make!Continue Reading
