Two years ago this month I had one of the most amazing experiences – I went to Spain for the first time. The school where I worked needed chaperones for the annual Upper School exchange program with a school in Spain. They already had two men going on the trip and really needed a woman, so even though I taught middle school Spanish, I was asked to chaperone. Normally, I’m a warm weather girl. I love weather in the 70s, 80s, and 90s. That said, I was pretty excited when I woke up this morning to find the whole yard covered in frost! That first frost of the fall holds the promise of the coming holidays and winter days full of hot chocolate, warm meals, and – if we’re lucky – snow! So the end of football season is upon us and everyone is gearing up for festivities this weekend (despite the snow in the south)! People are planning parties or days in and starting to try to figure out what to feed all those hungry mouths! It’s funny how much of an appetite we work up watching other people play football!
In all of the excitement of the holidays approaching it is really easy to forget the simple things…like what’s for dinner…tonight! It is always nice to have a few back-up recipes for when you haven’t been to the store too recently, you don’t have time to cook, but you still need to eat. This recipe is one of those recipes for me.
Every year, as the weather begins to cool, we always look forward to making turkey chili. Not only is it the first taste of fall and the coming holiday season for us, but it is also extremely easy and full of tasty, lean protein. This weekend, we headed up to the North Carolina mountains to relax for a long weekend (Fall Break!) and enjoy all of the fall mountain colors.
