There’s nothing like an easy, nutritious breakfast! You’ve probably heard that breakfast is the most important meal of the day. It jump starts your metabolism and gives your brain energy to process whatever you throw at it until lunch time. The Fourth of July is practically a week away – WHAT?! Crazy – this summer is just flying by! Where did June go, right?
I don’t know about you, but my favorite thing to do for the 4th is to visit with family and friends – eating good food and having fun! Since I grew up in Atlanta, I also prefer to start the day of with a 10K (Peachtree Road Race, anyone?), but that might just be me! 😉 That’s my tradition and I love it! …and I don’t have to be in Atlanta to follow it. I’ll run my 10K wherever I am – I mean, how else will I be hungry enough to eat some of everything at our afternoon/evening get-together?! Boston, Boston, what to say about Boston?! I’ve only been here for a few days now, but I’m already very pleased with the food! There is so much variety, though I do miss all of the readily-available Mexican food of the the south! One thing I don’t miss, though, is Italian food. Why??? Because there is just so much of it here!!! I know you all know of my Italian heritage, so you can understand why I am delighted by the plethora of Italian restaurants I have found in Boston.
Last week I posted my favorite summer salad dressing, Lemon Vinaigrette. I recommended you eat it with your favorite salad fixings, but I know plenty of you have been wanting me to post a salad that I would dress with the Lemon Vinaigrette. Your wish is my command! This Chickpea (a.k.a. Garbanzo Bean) salad is fresh, crisp, lean, and full of protein! Its the perfect salad for the summer time, when we are all trying to look and feel our best. Combining this lean salad with the Lemon Vinaigrette gives it a delicious tanginess that can’t be beat.
