Summer is now in full swing. Even in Boston, we’ve been experiencing temperatures in the 90s (being originally from what some of you like to refer to as “Hotlanta,” this impresses me more than it disgusts me. Ha!) Still, it’s hot outside. This meal is nice for this time of year because you can actually prepare the entire thing without using your stove at all if you’re cool with microwaving. To all of wonderful mothers out there (including my own!), thank you for everything you do for your children! Even if they do not understand all you do for them everyday, they do still feel the love you have for them. They may not talk about it much, or ever, but that kind of love and support helps them conquer even their worst days. It is what makes their smiles so big and bright and what holds them together when the going gets tough. You may not receive the thanks you hope for until they have children of their own, but you can realize it is hidden in every question they ask you and hug they give you! So, until you can hear it from your own kids, you can hear it from me: Thanks, Moms!
So the end of football season is upon us and everyone is gearing up for festivities this weekend (despite the snow in the south)! People are planning parties or days in and starting to try to figure out what to feed all those hungry mouths! It’s funny how much of an appetite we work up watching other people play football!
In all of the excitement of the holidays approaching it is really easy to forget the simple things…like what’s for dinner…tonight! It is always nice to have a few back-up recipes for when you haven’t been to the store too recently, you don’t have time to cook, but you still need to eat. This recipe is one of those recipes for me.
Whenever I have somehow forgotten to plan dinner or lunch and we need something in a hurry, we make these quesadillas. Talk about a quick and easy recipe! This one is a dinner/lunch in 15 minutes. You could also make these as a snack or appetizer to share with many people! It is super tasty, but leaves me feeling refreshed because of the spinach and sweet potato. Some quesadillas can make you feel sluggish because of all of the cheese. While this still has some delicious cheddar, it gets most of its flavors from the other ingredients. Also, most of the ingredients keep well, so we tend to have them on hand. The only thing we might have to run out for is the spinach, but that isn’t much!Continue Reading
