Do you guys ever feel like dinner has gotten boring? Like you’ve been eating the same kind of stuff over and over again….like you’re stuck in a rut. I mean, the dishes are different, and they’re all delicious, but after the umpteenth time you’ve had chili, you’re ready for a change! Well, sometimes I start to feel that way in the winter. I know, I know, winter doesn’t officially start until Sunday. Well, I’m jumping the gun, then! I suppose it all started with the farmer’s market last weekend…Continue Reading
It’s mid-September! By now, everyone is back to school and the year is starting to gear up. Football seasons have started, which means so has a lot of the fun of fall. Thank goodness there’s only about a week more until the real season starts!
One fun little recipe to have on hand this fall are these Mac & Cheese Bites. They’re packed full of the protein of eggs and cheese, making them good brain food for your little ones, but they still taste like the magical childhood comfort food we all remember! They’re the perfect lunch box addition for your kids, and boy will your kids be excited to find these little bites of home when they sit down to eat lunch!Continue Reading
I had no idea I was capable of staying away from the blog for so long! It has been tough on me, but I have been SO busy. I know you all know I’m a teacher by now, and, true, spring time at a school is a hectic time of year, but nope! That’s not what has kept me away. So what? What on earth could the big news be?!
So it is the middle of the week and you have been invited to a dinner party. The host is taking care of everything else, but you have been asked to bring a side. This means you will need to get home from work, whip up a side that travels well and will be as good later as it is when you make it, and get yourself to dinner on time. Has this ever happened to you? It has to me — and with frequency, too! It is always nice to get together with friends, but bringing a dish to their house can be such a hectic mess that so many people just turn to store bought. Only problem – your store bought options are rarely the healthiest.
For all these reasons and more, I love this recipe! It is so quick that you won’t even notice you had to bring anything to the party at all and if you take your “dressing” separate from the rest of the cole slaw and add it when you get there, it will be absolutely perfect when you serve it! In my house, we love this recipe so much that we do not just reserve it for parties – we have it as a side regularly. John once lived in South Korea for a year, so we joke that this recipe helps him get his weekly ramen rations. Enjoy this one. As for me, I’m taking it to a party later this week!
