Two years ago this month I had one of the most amazing experiences – I went to Spain for the first time. The school where I worked needed chaperones for the annual Upper School exchange program with a school in Spain. They already had two men going on the trip and really needed a woman, so even though I taught middle school Spanish, I was asked to chaperone. For the first time in what feels like a billion years it is sunny today! I am going to spend some much needed time outside and I can’t wait! Maybe I’ll pull a chair up in front of my largest window, curl up, and do some reading if it proves too cold to stay outside too long. Or maybe I can power through the cold by finally addressing some of the yard issues at the new house. (I’ve needed to rake my back yard for over a month, but I prefer to do that when the leaves don’t weigh seven hundred pounds because they’re so wet!)Continue Reading
I walked into Trader Joe’s the other day and there they were: spaghetti squash! YES-SAH! I love it when all the seasonal fall produce starts showing up in stores and at the farmer’s market. I especially love seeing these things at Trader Joe’s. Call me crazy, but when forced to choose between $2.69 per pound of squash or $2.69 for the ENTIRE squash, I’m gonna go with the latter! So, T-Joe’s, thanks for saving me money! I love you for it.

I had no idea I was capable of staying away from the blog for so long! It has been tough on me, but I have been SO busy. I know you all know I’m a teacher by now, and, true, spring time at a school is a hectic time of year, but nope! That’s not what has kept me away. So what? What on earth could the big news be?!
These grilled shrimp skewers are absolutely to die for! You will love them. I definitely did! If you have already made the pesto I posted last week, then you know it is D-licious! Adding shrimp to the mix and grilling the combination just makes these drool-worthy! John was even trying to barter with me to eat some of MY shrimp skewers! While I love him dearly, where Pesto Shrimp Skewers are involved, that is simply NOT GONNA HAPPEN!
On top of being so amazing that I could eat these for a week straight, they are easy, too! Remember when I told you that I’ve been making tons of this pesto to freeze for winter while my basil is still around? Frozen pesto = Easy dinner! Remember that and make a ton, too!
